During the month of June, Café Ilang-Ilang at The Manila Hotel will feature a delightful selection of dishes highlighting the exceptional quality and flavor of local Kurobuta pork.

Kurobuta, which translates to “black pig” in Japanese, is a type of pork originating from Berkshire, England. Known for its generous marbling, tenderness, and rich flavor, Kurobuta pork is often referred to as the “Wagyu of pork.”

Konrad Walter, Executive Chef of The Manila Hotel, expresses excitement about incorporating the produce of Esguerra Farms into Café Ilang-Ilang’s buffet spread. Esguerra Farms, located in Lipa, Batangas, is committed to sustainable and ethical farming practices that prioritize animal welfare and environmental conservation. Within the farm, they have established a Kurobuta Village where the pigs are raised in a safe, clean, and stress-free environment. This environment contributes to a higher pH level, resulting in maximum marbling, natural flavor retention, and healthier-colored meat.

 

The culinary team at Café Ilang-Ilang has curated a buffet dinner showcasing the remarkable qualities of Kurobuta pork. The menu includes enticing dishes such as Pork Ramen Soup, Kurobuta Pork Stew in Red Wine with Sweet Potato and Prunes, Korean Style Grilled Pork Belly, Kurobuta Pork in Mandarin Sauce, Roasted Crispy Pork Pata, Spicy Thai Mince Kurobuta Pork Salad, and Mini Ensaymada with Pork Lard. These delectable offerings will be available on a rotating basis during Café Ilang-Ilang’s Dinner Buffet every Monday, Tuesday, and Wednesday from June 5 to 28, 2023. The rate is Php 3,145 nett per person, with half rates for children aged 5-12 and complimentary admission for children 4 years old and below.
